What you'll learn

This Introduction to Food Literacy microcredential is designed for anyone interested in occupations that address food insecurity, chronic disease prevention, and sustainable food systems. According to the New York State Department of Labor, healthcare occupations are expected to remain in high demand over the next decade as the state's population continues to age. You will learn how to translate nutrition knowledge into practical strategies for community education, program delivery, and health literacy. Through hands-on learning in cooking, applied nutrition, and health education, you will build skills in meal planning, food preparation, nutrition communication, and culturally responsive approaches to promoting healthy eating. Importantly, you will have the opportunity to apply these skills through activities that reflect real-world community and food service environments. Talk with your professor about ways this microcredential may contribute to coursework required for learners pursuing the Dietetics Technician, Registered (NDTR) and Registered Dietitian Nutritionist (RDN) certification/licensing through applicable degree pathways. Successful completion of this microcredential prepares all to continue their studies and prepares those new to the field to apply for positions such as community health worker, community outreach staff, public health associate or food service professional in a human services environment.
