What you'll learn

Sharpen your skills in the art of food preparation! This microcredential builds your proficiency as a culinary prep cook and validates your skills to potential employers. You will start with stocks, soups and sauces and advance to poaching, roasting, bracing, sautéing. You will learn the various cooking methods used in deep frying, smoking and steaming. You will learn the value of using ingredients from a variety of sources both locally and globally and understand recipe creation and menu planning. You will even put your skills to the test in Chopped-like competitions with your peers! Coursework includes earning the ServSafe Food Handler certification accredited by the National Restaurant Association. If you already hold a valid certification, you can submit it to the Records Office for validation toward this microcredential. Successful completion of this microcredential prepares you for continued study and to immediately apply for entry- to mid-level positions such as prep cook, line cook, assistant sous chef, or culinary assistant.
